'Do Pork Right,' New North Arlington Cuban Restaurant Owner Says

NORTH ARLINGTON, N.J. — Joe Delle Fave of North Arlington is holding a grand opening for his Ridge Road Cuban restaurant Monday evening.

Antiguo's 5:30 p.m. celebration will feature live music and cigars, provided by Jimenez Tobacco in Newark. 

Delle Fave recently sold his first Cuban restaurant in Cranford to his partner, a Cuban woman who he said taught him all he needs to know about the authentic styles.

"You've got to be able to do the pork right," said Delle Fave, who also owned a sandwich shop 25 years ago, and makes everything by hand.

"I changed some of the recipes and added more Cuban spices."

Delle Fave recommends the Asado, seasoned pork.

Antiguo is located at 89 Ridge Road, North Arlington.
